Blueberry Lemonade Cake
(Serves 9)
Ingredients
Streusel Topping-
½ cup flour
1/3 cup sugar
1 tsp cinnamon
1/8 tsp salt
4 tbsp butter
Cake-
¾ cup sugar
1 large egg
4 tsp butter, soft
Juice from 1 fresh-squeezed lemon
1 tsp vanilla extract
½ cup milk
2 cups flour
2 tsp baking powder
2 tsp lemon zest
½ tsp salt
2 cups blueberries
Instructions
1. Preheat oven to 375F.
2. Prep a 9in square baking dish.
3. In a small bowl, mix the flour, sugar, cinnamon, and salt.
4. Cut the butter until mixture reaches a crumbly state. Set aside.
5. In a large bowl, beat the sugar, egg, butter, lemon juice, and vanilla. Then, add the milk.
6. In a separate bowl, mix the flour, baking powder, lemon zest, and salt.
7. Add to the first bowl and mix.
8. Add the blueberries and stir gently until blended.
9. Transfer the batter to the prepared pan.
10. Sprinkle the streusel topping on top.
11. Bake for 45 mins, until a toothpick inserted into the center comes out clean.
12. Slice and serve.
