Mar. A Book & A Recipe


For March 2023, we're sharing a special green dessert recipe. We're excited about Gertie's St. Patrick's Cheesecake from the adorable novella Corned Beef and Casualties by Lynn Cahoon.


Let's get started!


Ingredients

2 pre-made chocoloate graham cracker crusts

4 oz semi-sweet chocolate chips

3 8 oz packs of cream cheese, soft

1 cup sugar

4 eggs

1/3 cup green creme de menthe liquer

Whipped cream

Shaved chocolate


Instructions

  1. Preheat oven to 300F.

  2. Microwave or stove top melt the chocolate chips and set aside.

  3. Mix together cream cheese and sugar until smooth and creamy.

  4. Add eggs one at a time, beating until smooth.

  5. Stir in creme de menthe.

  6. Pour filling evenly over crust.

  7. Drizzle in melted chocolate randomly onto filling, letting it sink in.

  8. With a knife, cut through chocolate and filling to swirl to marble.

  9. Bake 1 hour and 10 minutes (until set).

  10. Turn off oven and open door slightly. Cool cheesecake in warm oven 1 hour.

  11. Remove from oven and cool at room temp for 1 hour.

  12. Add whipped cream and shaved chocolate to top or sides.

  13. Enjoy!
