Ingredients
Whole black peppercorns
Whole cloves
Whole cardamom
1 cinnamon stick
2 cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
3 large eggs
1 large egg yolk
1 cup sour cream
1 ½ sticks (6 oz) unsalted butter, room temp.
1 cup sugar
2 large pieces fresh ginger root (1/4 cup, tightly packed, finely grated)
Zest from 2-3 oranges (1 ½ tsp)
½ cup bourbon
1 ½ tsp sugar
¾ cup powdered sugar, sifted or strained
5 tsp orange juice
Instructions
1. Preheat oven to 350F.
2. Butter and flour a 6 cup Bundt pan.
3. Grind peppercorns, cloves, and cardamom, and measure out ¼ tsp of each.
4. Grind your cinnamon stick and measure out 1 tsp.
5. Whisk the flour with the baking powder, baking soda, spices, and salt in a small bowl.
6. In another small bowl, whisk the eggs, egg yolk, and sour cream. Set aside.
7. Cream the butter and sugar in a stand mixture until fluffy, light, and nearly white. Approx 3 mins.
8. Grate the ginger root and the orange zest. Add them to the butter/salt mix.
9. Beat the flour mixture and the egg mix, alternating between the two, into the butter until it makes a mousse.
10. Spoon batter into the prepared pan and bake about 40 mins. Until cake is golden and a wooden skewer comes out clean.
11. Remove to a rack and cool in the pan approx. 10 mins.
12. While the cake cools, simmer the bourbon and sugar in a small pot for about 4 mins. It should reduce to about 1/3 cup.
13. Brush the bourbon mixture all over the cake, including the bottom, allowing it to sink in.
14. Once cake is cooled, mix the sugar with the orange juice and either drizzle randomly over the cake or squeeze for a controlled drizzle.
